Pecan Toffee Shortbread: What Is the Recipe?
Well, this should not be new to you. The recipe may be unknown but
name is surely renowned. Pecan toffee shortbread is not that difficult
to prepare as people assume it to be. It needs a little effort and time.

Pecan toffee shortbread is considered as a Christmas delicacy. But most

Ingredients:
There are separate ingredients for the base and the topping. You will
need ground coffee, butter, peanut butter, cornstarch, flour and
superfine sugar to prepare the base. You won’t need too much of coffee.
Just one tablespoon of ground coffee is enough. You need to add half cup
of butter, 2 tablespoons of peanut butter and half cup of superfine
sugar. The flour and the cornstarch are given in equal quantities (that
is around two-third of a cup each). The topping will require three-forth
cup of brown sugar, three-fourth cup of butter, two tablespoon of light
corn syrup and a cup of pecan pieces (how could you forget the most
important ingredient?).

How will you prepare the pecan toffee shortbread?
At first you need to preheat the oven at 350 degrees F. You have to
grease the baking pan with butter or oil so that you can take out the
shortbreads easily after you finish off baking. Then line the pan with
aluminum foil and turn the edges so that they can be used as handles.
Take coffee in a small bowl. Boil some water and pour it over the
coffee. Let it steep for three to four minutes. Strain the coffee and
throw away the grounds.
Make sure that you sift the flour and the cornstarch well before you mix
them together. Now the mixing part begins. Take butter, peanut butter,
sugar and coffee in a bowl and cream them until they are light and
fluffy. Then you have to add the flour and the cornstarch. Continue
mixing them until the mixture becomes crumbly.
Put the dough in the baking pan and press it against the bottom of the
container. Take a fork and prick the surface of the dough at multiple
places. You have to bake the base for twenty two minutes.
Now you have to prepare the topping. Take a saucepan. Add butter, light
corn syrup and brown sugar to the saucepan. Heat it so that both the
sugar and the butter can melt. Boil the mixture and then simmer it for
four to five minutes. Add in the pecan pieces to the saucepan. Stir it
for sometime. The topping is ready!
Now pour the topping on the base. Let the topping cool and settle on the
base. After the cooling part gets over then you can cut the base into
desired shapes and sizes.
