You can have these shortbread biscuits with tea, coffee or even with a glass of vodka. They are a very good option when you feel like having a light snack. They are crispy and scrumptious. Ingredients:

If you have decided that you will make awesome Scottish shortbread biscuits at home then you will need 8 oz of butter, 6 oz of plain flour, 4 oz of self raising flour, and 2 oz of corn flour and 4 oz of castor sugar. You cannot use any kind of butter you like. The biscuits will melt in your mouth only when you use butter of a good quality. You cannot replace butter with margarine or lard. Margarine or lard will not give the exclusive taste of butter in these biscuits.

Things that you will require:

You will need a kitchen hob, an oven, sieve, saucepan, two sponge tins, knife, fork, spoon and greaseproof paper. You don’t need any special kind of equipment to prepare the Scottish shortbread biscuits.

The main course: Preparation of the biscuits

You need to sift the corn flour, self raising flour, corn flour and castor sugar together in a bowl. Melt all the butter on a hob. You have to stir the butter continuously while you melt it. Make sure that all the butter has melted and then spread it over the mixture of flour and sugar. Mix all the ingredients to get smooth dough. Now put the greaseproof paper in both the sponge tins. Divide the dough in two parts and put them in the sponge tins which were lined with greaseproof paper. Don’t forget to prick both the dough pieces with a fork.

The Scottish shortbread biscuits need to be baked at 300 degrees F for fifteen to twenty minutes. Then you have to take out the sponge tins. Divide the dough into rectangular sections and put it back into the sponge tin. Repeat the same thing for the other sponge tin. You have to again put the sponge tins in the oven at 300 degrees F for thirty five minutes so that they are fully baked. They become light brown in color once they are completely baked. Don’t burn the biscuits by overcooking them.

Allow the biscuits to cool down. Run a knife along the marked sections. Take out the pieces carefully as they are brittle. Spread some sugar on top of each biscuit if you like sugar a lot. But the biscuits can be eaten even without the sprinkled sugar on top. They taste marvelous and are easy to prepare. But don’t leave the biscuits just like that. Keep them in a proper airtight jar. You could have also cut the dough into traditional Scottish symbols. The biscuits will become exceptional. But don’t try to shape them as the “thistle”, a traditional Scottish symbol. Many Scotts will not find it fair.
